The world has recently started realising the full extent and impact of micronutrient malnutrition. Deficits in three key micronutrients - vitamin A, iron and iodine - prevent nearly three billion people from achieving their full potential as students, parents, workers and citizens. Fortunately, a number of interventions have shown that micronutrient malnutrition is as preventable as it is devastating. Fortification is synonymous with enrichment. This book focuses on developing zinc and folic acid fortified baked products. The developed fortified cakes and cookies can be fortified with micronutrients, can be promoted and commercialized to reach out to the public and improve the health status of the budding future generation.
