Changing of quantity oriented market to quality oriented market will depend on the reliability of the safety and the quality of the food and quality assurances of the production processes. Rising prevalence of drug resistant food-borne pathogens in humans signals that one of the vehicles of pathogen transfer is food. Today the concern of food safety focus mainly on pathogens, antimicrobials, chemical residues and hormones. The steady increase of national and international standards for food safety and public health has stepped towards to protect the consumer against food-borne health risks. The emerging pathogens such as Salmonella and Campylobacter are only detectable through targeted monitoring system since there is no other appropriate way to recognize such contamination. Therefore, the food quality is an important food manufacturing requirement and intervention measures in the food chain should apply on and off-farm production procedures.
