Food poisoning and infection: Bacteria contamination of cooked rice

Ready-to-eat (RTE) cooked rice have become one of the popular fast foods consumed. They are prepared and sold in eateries, public and traditional markets thus making them readily available for consumption. However, RTE cooked rice like any other fast foods poses a managerial challenge to the food safety authority for continuous surveillance in terms of its safety for consumption. This is because of the presence of bacterial species found in cooked rice. Most food poisoning cases reported so far are associated with bacterial contamination. The book discussed the need for improvement and maintenance of good hygienic practices by food handlers and vendors. This book, therefore, gives a sense of consciousness and responsibility of the need to keep our food safe.
