India has large resources of livestock and poultry, which play a key role in improving the socioeconomic conditions of the rural population. Poultry industry in India has made impressive progress during the last three decades evolving from backyard venture to a full-fledged commercial agro-industrial venture. Muscle foods are high-quality protein sources that have a good balance of necessary amino acids and have a high biological value (Ahmad, 2005; Lawrie and Ledward, 2006), Nolhr and Biesalski, 2007). Meat is also a good source of iron, selenium, vitamins A, B12, folic acid, salt, potassium, and magnesium, among other minerals. These micronutrients found in meat have a substantially higher bioavailability than those found in plants. Among muscle foods, poultry meats have high-biological-value protein, vitamin, and mineral content. Chicken meat, in addition to having a low carbohydrate content, has an advantage over red meat due to its low fat level, and plays a significant part in the diets of people of all ages. These two characteristics of chicken meat (high protein and low carbohydrate) contribute to a low glycaemic index, which is thought to be advantageous to persons with obesity, diabetes, and cancer (Nohr and Biesalski, 2007).
