The monograph examines issues of studying the pattern of oxidation of corn starch with hydrogen peroxide in the presence of FeSO4 , establishing the influence of various factors on the physicochemical properties of modified starch. Study of structural and rheological changes in the oxidation process using various modern methods, as well as the influence of factors on the development of technological parameters for modifying starch by oxidation.
