Case study: Teaching honey quality

When educators are committed to building and transforming human beings and their reality, they are nothing more than instruments for changing paradigms. It is up to the school to reorganize itself and incorporate new technologies into its practice, with a view to creating a new man capable of activating and critically participating in society. By involving students in the production, processing and industrialization of honey, the aim is to impart knowledge of the scientific and technological bases of honey processing, using practical experiments, seeking to arouse curiosity, awakening the desire to learn and participate in the construction of their own knowledge. The aim is to challenge students to exercise their ability to analyze a situation, stating the problem and proposing solutions, choosing the strategies to be adopted, looking for resources, analyzing the risks and advantages and, in the process, developing the skills required in their training. In this way, students build up their knowledge of honey processing and the implications of the various stages for quality characteristics.
