Stable microgel was created as pickering type emulsifiers, under hexamethyleneguanidine chloride at the concentration range of 0.5-1.5g\/L. The size of the microgel particles was measured by dynamic light scattering technique (DLS). System was stable with diapason size distribution between 100nm and 500nm. Water\/Oil emulsions were created; toluene has been used as model and Soya oil as target compound. Capsules ware stabilized under complexation of Ca2+ ions with pectin polymers. This emulsion was assessed by optical microscopy studies using OLYMPUS GX ¿ 71 microscopes equipped with SIAMS Photolab. The stable microcapsules with average diameter in the range of 10-100 ¿m have been obtained.
