In a context in which disruptions to the production, distribution\u003c\/p\u003e\u003cp\u003eand consumption of food are figured as exceptions to the smooth,\u003c\/p\u003e\u003cp\u003ejust-in-time efficiencies of global supply chains, we examine the pandemic\u003c\/p\u003e\u003cp\u003enot simply as a particular and acute moment of disruption but rather as a\u003c\/p\u003e\u003cp\u003elens on a deeper, longer set of structural processes within which disruption\u003c\/p\u003e\u003cp\u003eis endemic.
