In order to avoid foodborne diseases (STDs), the National Health Surveillance Agency (ANVISA) has a regulation that establishes standards to be met by all establishments related to food. Thus, the present book aimed to investigate the hygienic-sanitary conditions of the kitchens of the Municipal Schools of Sorriso - MT. The form used for qualitative analysis was based on the RDC No. 216\/2004. Ten schools participated in the research, all of which had a nutritionist responsible for the activities performed in the kitchen, with two to three lunch ladies per shift, who received training twice a year, referring to good practices (GP) and personal hygiene.
